Everyday Berry Baked Oatmeal

Ingredients
  

The Dry Ingredients

  • 1 cup rolled oats (large flake) I like these
  • ½ cup toasted chopped walnuts optional
  • ½ tsp baking powder
  • ½-1 tsp cinnamon
  • ¼ tsp salt

The Wet Ingredients

  • 1 cup milk I use unsweetened almond milk, I like this kind
  • 3 tbsp maple syrup
  • 1 egg
  • 1-2 tbsp ghee, butter or melted coconut oil more to grease the pan
  • 1 tsp vanilla

The Fruit

  • 2 ripe bananas cut into slices
  • 2 cups frozen berries, any kind or mixed berries I like this kind
  • About ¼ cup unsweetened shredded coconut

Instructions
 

  • Heat oven to 375˚F.
  • Grease the bottom and sides of an 8*8 pyrex, 12-inch cast iron pan or something similar in size (if you are using a cast iron pan you can melt a little butter or coconut oil right in the pan on the stovetop).  NOTE: I show pictured here two different recipes, one in a small oven dish (a single recipe) and them one in a larger container (a double recipe).
  • In a medium size bowl, mix together The Dry Ingredients.
  • In a separate bowl mix together The Wet Ingredients.
  • Spread the banana slices across the bottom of the prepared baking dish.  
  • Sprinkle half the berries on top.
  • Sprinkle The Dry Ingredients over the bananas and berries and then evenly pour The Wet Ingredients on top, shake the dish a little so that everything settles.  Scatter the remaining berries on top and sprinkle with coconut.
  • Bake for 35-45 minutes.Serve warm, cooled or even reheated.  My kids like this dished out into small mason jars so they can grab this and go.
