This soup has all the vitamins, nutrients and immune boosting foods that can help strengthen your system through the winter.

Ingredients

  • 2 tbsp. avocado or grapeseed oil
  • 1 medium yellow onion, chopped finely
  • 3 cups low sodium chicken or vegetable
  • broth
  • 1 pound carrots, peeled and chopped
  • 2 tbsp. fresh grated ginger
  • 2 tsp. low sodium tamari, soy or coconut
  • aminos
  • 3 tbsp. light miso paste
  • ½ cup canned coconut milk (regular or
  • light)
  • 2 tsp. apple cider vinegar
  • 1 tbsp. maple syrup
  • Tahini Drizzle
  • 2 tbsp. tahini paste
  • 2 tbsp. water
  • 2 tbsp. lemon juice

Instructions

    In a large pot heat oil, add the onion and sauté until translucent, about 5 minutes.

    Add the broth, carrots, ginger, and tamari, soy or coconut aminos. Bring to a boil, cover, and reduce the heat to medium low so that the soup maintains a simmer.

    Cook until the carrots are soft, about 10-15 minutes. Let the broth cool enough to blend.

    Add the soup to a blender along with the miso paste, coconut milk, apple cider vinegar and maple syrup. Blend until smooth. Reheat if necessary.

    Make the Tahini Drizzle while the soup is cooking. Whisk together the tahini, water and lemon juice in a small bowl. Thin it with more lemon or water if necessary. Drizzle on the top of each bowl. Serves 4
