Cauliflower Carrot Flat Bread Recipe

This recipe is my go-to bread replacement when I’m feeling like I want to do some detoxing. It is flexible like bread and makes a great sandwich!
Ingredients
- 4 cups riced cauliflower (1 small
- cauliflower)
- 2 carrots (the size of the ones on the
- bunch)
- 4 Tbs. whole flax seeds
- ¾ tsp. sea salt to 1½ tsp. kosher salt
- 1 cup almond or chickpea flour
- 1 Tbs. unpasteurized honey
- 4 eggs
Instructions

Preheat the oven to 400˚F. Prepare a cookie sheet with parchment, allowing it to overhang.

In the bowl of the processor, “rice” the cauliflower into crumb-like pieces, then measure 4 cups, empty into large mixing bowl. Add the carrot to the processor and chop the same way as the cauliflower, add to the bowl with the cauliflower.

Add the flax seeds, salt and almond or chickpea flour to the cauliflower mixture. Drizzle the honey over the whole mixture.

Make a well in the centre, add the eggs, mix to lightly scramble and then start incorporating the cauliflower mixture into the eggs until the mixture is uniform and even and looks like a dough.

Place the mixture on the prepared cookie sheet and flatten until it is evenly spread over the entire sheet, I use my hands to do this. Bake for 25 minutes. Cool on a wire rack and then slice into bread- like sizes.

Freezes well! Make about 12-15 slices of bread

- Most recipes freeze well for up to 3 months. Cool completely before transferring to a freezer-safe container.
