Chili Spiked Sweet Potato and Scallion Rösti Recipe

A rösti is like a giant latka but Swedish. This rösti is baked, making it a little healthier then its fried cousin. Serve this as a simple side dish any night or top it with a sharply dressed arugula salad or a poached egg for a light meal. It is sweet and savory and all delicious. Cut it into wedges to serve.
Ingredients
- 2 sweet potatoes (peeled or not
- peeled)
- 1-2 green onion, minced
- 1 egg, beaten
- 1 tsp. kosher salt
- ¼ tsp. chili powder
- 1 Tbs. maple syrup
- Avocado oil spray
Instructions

Preheat the oven to 400˚F convection, line a baking tray with parchment. Generously spray with the oil spray a 10-12-inch circle on the parchment.

Grate the sweet potatoes on a box grater, I use the fine grater disk on my food processor. Place the grated sweet potato in a large bowl and squeeze it with paper towel to get some water out. Add the minced green onion, egg, maple syrup and chili powder, salt and pepper.

Mound the sweet potato into a circle about 10-12-inch where the oil is. Spray the top of the roost with the oil spray.

Bake in the oven for 25-30 minutes. The edges will be darkened and crisp. Remove from the oven, place a second piece of parchment on top of the rösti. Using a second sheet (flip the sheet up side down so that it nest into the first sheet), flip the 2 sheets over together so that the rösti is now on the second sheet, and peel off the bottom parchment which is now at the top. Using the now bottom parchment sheet, slide the rösti back onto the original cookie sheet (right side up). Bake for another 20-25 minutes.

Serve hot or warm. Serves 4-6 Serving Suggestions: • Serve with a lightly dressed (oil/lemon juice) arugula salad on top. • Serve with poached eggs. • Serve sprinkled with goats cheese. • Serve as is as a side dish.
