The sweet, gentle flavour of ricotta cheese is deliciously paired with bitter green, lemon and pepper, making for an irresistible and easy pizza.

Ingredients

  • 1 10-12 inch farinata (socca), cooked
  • ⅓ -½ cup ricotta cheese
  • 1-2 tbsp honey
  • Coarsely ground black pepper
  • 2 radishes, thinly sliced
  • Handful of bitter greens (choose from:baby
  • arugula, shredded kale, watercress, micro
  • greens
  • Zest of 1 lemon
  • Coarse sea salt (Maldon) for sprinkling
  • Drizzle of extra virgin olive oil
  • Drizzle of thick balsamic or apple vinegar

Instructions

    On a freshly cooked and still warm farinata (socca) pancake/crust, spread the ricotta cheese.

    Drizzle with honey. Sprinkle with pepper. Top with radish slices, greens and lemon zest. Drizzle with olive oil and balsamic vinegar. Serves 6.
