Farinata (Socca) Pizza with Ricotta, Lemon and Bitter Greens Recipe

The sweet, gentle flavour of ricotta cheese is deliciously paired with bitter green, lemon and pepper, making for an irresistible and easy pizza.
Ingredients
- 1 10-12 inch farinata (socca), cooked
- ⅓ -½ cup ricotta cheese
- 1-2 tbsp honey
- Coarsely ground black pepper
- 2 radishes, thinly sliced
- Handful of bitter greens (choose from:baby
- arugula, shredded kale, watercress, micro
- greens
- Zest of 1 lemon
- Coarse sea salt (Maldon) for sprinkling
- Drizzle of extra virgin olive oil
- Drizzle of thick balsamic or apple vinegar
Instructions

On a freshly cooked and still warm farinata (socca) pancake/crust, spread the ricotta cheese.

Drizzle with honey. Sprinkle with pepper. Top with radish slices, greens and lemon zest. Drizzle with olive oil and balsamic vinegar. Serves 6.
