I love serving this as a first course with a tiny bit of greens on the side with a light vinaigrette. Or you can serve a few eggplants split in half on a platter for a buffet dinner and each person takes half. Delicious!

Ingredients

  • 2 large purple eggplants or 4 small,
  • pricked with a fork or toothpick in a few
  • places
  • 1 clove garlic, minced
  • 3 Tbs. good quality extra virgin olive oil
  • Juice of ½ lemon
  • Honey, enough for a light drizzle
  • 1 tomato, finely chopped
  • About 4 heaping Tbs. tahini
  • ½ jalapeno or other chili pepper, finely
  • chopped, optional
  • Big handful of parsley leaves, chopped
  • 1 Tbs. chopped fresh oregano or a few
  • pinched of dried oregano, optional
  • Coarse sea salt or kosher salt and freshly
  • ground pepper

Instructions

    Mix olive oil and garlic together in a small bowl, set aside

    Heat grill to med high for 20 minutes. Lay eggplants on grill, whole. Grill on all sides until the eggplants are completely soft. This can take a total cooking time of about 15-25 minutes. Remove eggplant from the grill, carefully slice in half; you can leave the stem intact if you want. Lay on platter.

    Sprinkle the eggplant halves with a little salt (I use kosher salt for this part) and pepper.

    Drizzle eggplants with garlic oil, squeeze lemon juice over eggplant. Lightly drizzle honey over eggplant.

    Lay a lump of chopped tomato on a segment of each eggplant. Do the same with the tahini; about 1 Tbs. of tahini on each eggplant half, in one area. Sprinkle chopped jalapeno peppers over the eggplant. Sprinkle with parsley and finish with freshly ground pepper and sea salt. Serves 4-6
