This is a delicious alternative to mashed potatoes. Enjoy it with any grilled protein or a dish that has a rich gravy.

Ingredients

  • 1 medium head cauliflower, broken into florets
  • 1½ cups frozen peas, plus more for garnish
  • 3 tbsp butter or olive oil
  • 1 tsp kosher salt
  • Plenty of fresh black pepper
  • ¼ cup lightly packed fresh dill or mint

Instructions

    Steam or boil cauliflower until tender but not mushy, about 15 minutes. Lift the cauliflower out of the steamer or water and transfer to a kitchen towel. Let any residual water evaporate for a few minutes.

    In the meantime, while the cauliflower is drying off, add the peas to the steamer and cook for 2 minutes, then add them to the towel with the cauliflower.

    While the cauliflower and peas are still warm, transfer to a food processor. Add butter or oil and salt. Process until smooth but with a little texture.

    Mince the dill or mint by hand and fold into the cauliflower and pea mixture. Season with salt and pepper. Serves 6.
