Herbs De Provence Roasted Turkey Breast Recipe

Herb de Provence is a French aromatic herb mixture made up of thyme, rosemary, bay leaf, basil, savory, marjoram and can include lavender, fennel seeds and dries sage. It can be found in the spice section of most grocery stores.
Ingredients
- For the Marinade
- 2 garlic cloves, finely minced (through a
- press or a fine microplane)
- 1 Tbs. Herbs de Provence spice mixture
- 1 sprig of fresh rosemary, chopped finely
- ¼ cup good quality balsamic vinegar
- ¼ cup extra virgin olive oil
- 1 Tbs. of kosher salt, or to taste
- 1 generous tsp. freshly ground black
- pepper, or to taste
- 1 boneless skin-on turkey breast, not
- rolled
- 1-2 cups liquid, wine, water or stock
Instructions

In a small bowl mix the marinade ingredients together.

In your roasting pan or pyrex dish, rub this mixture all over the turkey breast, separating the skin from the meat in order to get the rub under the skin. This can be done app to 24 hours before cooking. Bring the turkey breast to room temp for one hour before cooking.

Preheat the oven to 375˚F.

Add ½ of the wine and ½ of the water into the bottom of the roasting pan.

Cook for 1¼ -1½ hrs or until the meat thermometer reads 150°F degrees in the thickest part of the breast, the skin should be golden brown. Basting turkey every so often with the drippings. As the pan dries out a little add more wine and/or water as needed.

Once the turkey is removed from the oven, let it rest for 10-15 minutes before slicing.
