Marinated Tofu - vegetarian recipe by Carolyn Cohen

Having a block of marinated tofu in the fridge that’s ready to eat makes me happy! I snack on it as is or use it to top salads or as a filler for an all-vegetable wrap.

Ingredients

  • 1 block of firm or extra-firm tofu (I like
  • Wildwood Organic Sprout Tofu)
  • ½ cup apple cider vinegar
  • ½ cup tamari
  • ¼ cup water
  • 1½ tbsp grapeseed oil
  • ¼ cup toasted sesame seeds (I like a mix of
  • black and white)

Instructions

  1. 1

Cut tofu into medium-size cubes or slabs.

  2. 2

Place the apple cider vinegar, tamari, water and oil in a flat dish (I use a Pyrex).

  3. 3

Place tofu cubes in marinade, toss to coat. Allow to marinate for about 30 minutes, then drain and pat dry with paper towel.

  4. 4

Sprinkle the sesame seeds all over. Store in a glass dish/container in fridge. Serves

  5. 5

Note: Marinated tofu will keep in the fridge for 5 days.

Tips & Storage

How to Store
Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
Make It Vegan
Many vegetarian recipes can be made vegan by substituting dairy with plant-based alternatives. Check the ingredients and swap as needed.
Nutrition Tip
Pair with a whole grain or legume for a complete protein. This makes the meal more filling and nutritionally balanced.
