Ingredients

  • 1 lb. green beans
  • 1 Tbs. olive oil
  • Kosher salt and pepper
  • ½ red onion, sliced in ½ inch wedges
  • 1 Tbs. balsamic vinegar
  • 1 tsp. honey
  • 1 sprig of fresh thyme, leaves removed
  • and chopped
  • 2 garlic cloves, thinly sliced

Instructions

    Preheat oven to 450ºF.

    On a tin foil covered cookie sheet, toss green beans in olive oil and sprinkle with salt. Spread evenly on the sheet, roast for 10 minutes. Remove from the oven.

    Add red onion slices, toss to coat, and add salt and pepper. Place back in the oven for about 10-15 minutes longer.

    In the meantime, in a small bowl, mix balsamic vinegar, honey, thyme and garlic. Set aside.

    Remove beans from the oven. Drizzle beans with vinegar mixture, toss to coat. Return beans to oven for another 10-15 minutes. At this point the beans should be slightly shrived and speckled with brown spots.

    Transfer to serving plate. Serves 4-6 To make ahead of time: Follow steps 1-5, leave on baking sheet and reheat in hot oven before serving.
