Quick Garlic Butter Baked Fish Recipe

This 20-minute garlic butter baked fish is all you need during the week. It is easy, delicious and a real crowd pleaser. You can use any type of fish—I love swordfish or salmon for this one.
Ingredients
- 4 6-oz fish portions (salmon, halibut,
- swordfish, cod)
- 1 tbsp unsalted butter
- 1 tbsp extra virgin olive oil, more for drizzling
- 2-3 cloves garlic, chopped finely with a knife
- ¼ cup minced fresh herbs (use anything you
- like; I use parsley, dill, tarragon, oregano)
- Plenty of fresh coarsely ground mixed
- peppercorns*
- About 1 tsp kosher salt
- 1 lemon, sliced in thin rounds (you will need
- only 4 slices)
Instructions

Preheat a cooking vessel large enough to hold the fish in one layer while you preheat the oven to 425˚F.

Ten minutes before putting your fish in the vessel, add the butter, olive oil and garlic to the cooking vessel and place it back in the oven.

Remove the cooking vessel from the oven and carefully stir the minced herbs into the butter, oil and garlic.

Dredge the fish on the flesh side in the butter-garlic-herb mixture, then flip the fish so the flesh side is up and the skin is down. Using a brush, pick up some additional garlic and herb butter/oil and schmear it on top of the fish.

Sprinkle the top of the fish with pepper and salt. Place 1 lemon slice on each fillet of fish. Drizzle with additional olive oil.

Bake for 10-15 minutes. Serve hot or warm. Serves

* I use a peppercorn medley packaged in a pepper grinder (available in the spice section of the supermarket), but feel free to simply use freshly ground black pepper.
