Salted Cacao Hazelnut Refrigerator Fudge - recipe by Carolyn Cohen

I love a little sweet after dinner or late night. This is perfect to nourish that craving! Don’t get confused between cacao powder and cocoa powder. Cacao powder is the RAW, UNROASTED natural version of cocoa powder. It is full of magnesium and is a super food.

Ingredients

  • 4 medjool dates, pitted
  • 4 oz tahini
  • 2 Tbs. coconut oil
  • 4 tsp. cacao powder
  • 1-2 oz chopped toasted hazelnuts (about
  • ¼-½ cup)
  • 2 Tbs. cacao nibs
  • Flaky sea salt, I like maldon

Instructions

  1. 1

Line a 4”by 6” container with parchment, I use a little glass or Tupperware container.

  2. 2

In the bowl of a food processor, roughly chop the hazelnuts, empty into a bowl and reserve.

  3. 3

In the processor (no need to clean it), place the dates, tahini, coconut oil, cacao powder, process until smooth, empty to a med size bowl, stir in the chopped toasted hazelnuts and cacao nibs.

  4. 4

    Pour into prepared container.

  5. 5

Refrigerate for 15-20 minutes or until the top of the fudge is no longer shiny and wet looking (faster in the freezer), sprinkle with the flaky sea salt, place back unto the fridge for 1 hr.

  6. 6

Cut into 1-inch pieces and enjoy! Makes about 12-16 pieces This fudge NEEDS to remain in the fridge, the coconut oil and tahini will melt at room temperature, and it tastes better cold!
