Superfood Everything-but-the-Bagel Roasted Arctic Char Recipe

This superfood version of Everything-but-the-Bagel spice mixture is the perfect flavour for delicate arctic char. It also makes for the easiest weeknight meal. Make a big batch of this and use it on vegetables and other proteins. It is essential that you use garlic flakes (not powder), onion flakes (not powder) and flaked salt (not fine salt).
Ingredients
- For the Superfood Everything-but-the-
- Bagel Spice Mix
- 2 tbsp. flaked sea salt, I like Maldon Sea
- Salt or Fleur de Sel
- 1½ tbsp. dehydrated onion flakes
- 1½ tbsp. dehydrated garlic flakes
- 1 tbsp. white sesame seeds
- 1 tbsp. black sesame seeds (or additional
- white seeds)
- 1 tbsp. poppy seeds
- 1 tbsp. chia seeds
- 1 tbsp. whole flax seeds
- 1 tbsp. hemp seeds
- For the Arctic Char
- Olive oil or Avocado spray
- 2 arctic char fillets (about 1½ pounds
- total)
- 2 tbsp. minced dill, more for after the fish
- is cooked
- 1 tsp. lemon zest
Instructions

Mix all ingredients Spice Mix ingredients together.

Line cookie sheet with foil and spray the foil. Arrange the top rack second from the top position. Heat oven to broil.

Lay the fish on the sheet. Spray the fish. Sprinkle with a generous amount of Superfood Everything-but-the-Bagel Spice Mix, it should almost be like a crust.

Sprinkle the dill and lemon zest.

Broil for 7-8 minutes, keep an eye on it. It will smoke a little, feel free to leave the oven door slightly ajar.

The fish should be bubbling and charred on the edges.

Remove from the oven, sprinkle with additional dill.
