The Ultimate Friday Night Pea Sup Recipe

This recipe was given to me by a good friend, it has deep Lithuanian roots and is perfect for a Friday Night Dinner. It makes a big batch and is very freezer friendly.
Ingredients
- 1 large Spanish onion
- 4 Tbs. extra virgin olive oil
- 1 bag carrots (2 lb)
- 1 bag parsnips (1 lb)
- 4 cups dried split peas (900 gms)
- 16 cups, more if needed, water
- 1 Tbs. or more to taste kosher salt (I always
- add about ½ tsp. at the end)
- 1 bunch of dill, stems removed, leaves finely
- minced
- 3 Tbs. dry sherry, such as (amontillado or dry
- fino)
- A generous amount of freshly ground pepper
- A couple of dashes of cayenne
- A few of dashes of cumin, or to taste (I like a
- lot, some like none)
Instructions

Heat oil in heavy bottom pot (I use my Dutch oven for this.)

Chop onion finely, I do this in the food processor, add to pot and cook until soft, about 5-10 minutes.

Chop carrot and parsnip finely in the processor, add to onion and cook for 5 or 10 minutes.

Add peas and salt, cook for 5 minutes, tossing.

Add water, bring to a boil and cook on low for about 1 hour or until peas are soft and have fallen apart.

Remove about 8 cups of soup and blend, leaving the consistency textured, do not puree.

Add back to the soup, stir. Add the chopped dill and sherry. Stir. Add pepper, cayenne and cumin, taste and add more salt, pepper, cayenne or cumin if necessary.

Serve hot. Serves 12-16 Makes about 24 cups of soup Make Ahead Tip: You can make this soup and freeze it or make a day or two in advance and refrigerate it. It may thicken, simply add water to thin it to desired consistency, taste for seasoning before serving.
