Arugula Salad with Delicata Squash, Candied Sunflower Seeds Recipe

and medjool dates This very beautiful simple arugula salad is brought to a higher level from the sweet and delicious delicata squash. If you cant find delicata squash use acorn.
Ingredients
- 2 cups sunflower seeds
- 4-5 Tbs. of pure maple syrup
- 1 delicata squash
- 2 Tbs. olive oil for the squash
- 1-2 boxes baby arugula
- 6 medjool dates, pitted and sliced into
- thin strips
- 1 small log goat cheese (optional)
- Dressing
- Best quality aged balsamic vinegar
- A fruity olive oil
- Kosher salt
- Plenty of freshly ground pepper
Instructions

Preheat oven to 400˚F.

Line a cookie sheet with parchment. On the prepared cookie sheet, toss the sunflower seeds with the maple syrup. Bake for about 18-20 minutes, tossing several times during the cooking process. All the maple syrup should be absorbed but not crystallized. Remove from the oven and let cool. Slide the parchment onto the counter to allow the sunflower seeds to cool. As they cool, using a spatula, release them from the parchment.

Line the cookie sheet with parchment again. Slice the ends off the delicata squash (do not peel the squash), using a spoon, try to scoop out as many seeds as possible from the squash. Slice the squash into ½ inch slices (rounds). Get rid of any leftover seeds from the squash rings. Place on the parchment lined sheet, toss with the olive oil and roast for about 30 minutes, the rings should be golden brown. Remove from the oven, let cool or use them while they are warm.

Place the arugula in a large bowl or platter, drizzle with balsamic and olive oil. Toss. Add the sunflower seeds, the whole log of goat cheese broken into bits, sliced dates and the squash, toss. Sprinkle with salt and pepper. Serve! Serves 8
