These healthy meatballs are a perfect meal, complete with healthy complex carbs and vegetable. Serve with a salad and dinner is done!

Ingredients

  • ½ cup cooked sweet potato*
  • 1 small yellow onion, grated
  • ¼ cup frozen spinach, defrosted and
  • excess water squeezed out**
  • 1 clove garlic, minced
  • 2-3 tbsp flax seed meal
  • 1 tsp kosher salt
  • 454 g/1 lb ground chicken
  • *I cook the sweet potato in the
  • microwave. Poke a few holes in the sweet
  • potato and microwave it on high for 5
  • minutes. It should be fork tender; if it is
  • not, flip it and put it back for a couple of
  • minutes.
  • **Measure about 1 cup loose frozen
  • spinach, defrost it and then squeeze out
  • all excess water. You will be left with
  • about ¼ cup.

Instructions

    Preheat oven to 400˚F, lightly oil spray a 9x13 inch Pyrex dish.

    Mix together cooked sweet potato, grated onion, spinach, garlic, flax meal and salt in a medium-sized bowl.

    Add ground chicken and knead until the mixture is uniform.

    Shape into 12 balls.

    Place in oiled Pyrex and cook for 15 minutes, remove from oven, flip to second side and cook for another 15 minutes.

    Serve drizzled with Goin’ Green Tahini, Delicious Dish. Makes 12 meatballs, serves 3-4.
