Making a cup of quinoa is a great idea. You can eat it as-is or use it for Quinoa Pizza Bites or add a few things and make a Quinoa Tabouli.

Ingredients

  • 1 cup dry quinoa
  • 1½ cup water
  • Pinch of salt

Instructions

    Rinse quinoa in a strainer, put into a small pot with water and salt, and bring to a boil. Reduce the heat and simmer covered for 15 minutes. After 15 minutes, the water will be absorbed by the quinoa and the quinoa will be fluffy.

    Remove from the heat, open the lid and fluff with a fork and let cool with lid off. Makes about 3 cups cooked
