Basic Short Grain Rice - sides & salads recipe by Carolyn Cohen

Rice is a great side dish to make, but it also a great starter for fried rice. If you are using it for fried rice, the rice is best if it is cold (from the fridge).

Ingredients

  • 2 cup short grain white rice*
  • 2 cup water

Instructions

  1. 1

Put the rice in a large bowl and add enough water to submerge it by an inch. Use your fingers to stir the rice—stirring the rice like this will loosen the powdery rice starch from the grains and cloud the water. Tilt the bowl to drain the rice, using your hand to keep the rice from going down the drain with the water, and repeat until the rice no longer clouds the water.

  2. 2

Place the drained rice in a small pot with a lid, add the water, cover the pan, and bring to a boil over medium-high heat. Once the water boils, reduce the heat to low and cook, covered, until the rice has absorbed all the water in the pot, about 20 minutes.

  3. 3

Remove from the heat, take the lid off and let it sit for another 10 minutes before eating.

  4. 4

If you want to use the rice for fried rice, empty the rice onto 1 or 2 plates, spread it out and put it in the fridge until its cold. Makes about 4-6 cups cooked rice *if you want to make brown rice, follow the same instructions but instead of using 1 cup of water, you will need 1½ cups water.

Tips & Storage

How to Store
Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
Make Ahead Tip
Many sides can be prepped in advance. Chop vegetables and make dressings ahead of time, then assemble just before serving.
Serving Tip
This pairs well with a variety of main dishes. Try it alongside grilled chicken, fish, or a hearty soup for a complete meal.
