Cajun Rub for Salmon, Chicken, Steak or Tofu - chicken & turkey recipe by Carolyn Cohen

I always make a quadruple batch at one time and store it in a jar in the pantry. Then...all I have to do is buy the fish, chicken or meat and dinner is made!

Ingredients

  • 1½ Tbs. kosher salt
  • 1½ Tbs. paprika
  • 1½ Tbs. chili powder
  • ¾ tsp. dried oregano
  • ¼ tsp. cayenne pepper

Instructions

  1. 1

Mix all the spices together in a small bowl. Store in a jar or container in the pantry Makes about ¼ cup spice mixture. I like to double or triple this mixture. I store it in the pantry and it will last me the whole year!

Tips & Storage

How to Store
Refrigerate leftovers in an airtight container for up to 3-4 days. Chicken and turkey reheat well in the oven at 325°F to keep the meat moist.
Can I Freeze This?
Absolutely. Cool completely and store in a freezer-safe container for up to 3 months. Thaw in the refrigerator overnight before reheating.
Cooking Tip
Use a meat thermometer to ensure poultry reaches an internal temperature of 165°F (74°C) for food safety. Let it rest for 5-10 minutes after cooking for juicier results.
