Cauliflower Rice with Leeks, Peas and Sun-Dried Tomatoes Recipe

This “fried” rice side dish will really hit the spot! It is terrific reheated for lunch the next day, especially with a fried egg over it! I like to use oil packed sun dried cherry tomatoes (see photo) but regular size sun dried tomatoes will do, just make sure that they are oil packed. You can also use homemade Tomato Confit, Delicious Dish.
Ingredients
- 1½ tsp olive oil
- ½ red onion, finely diced
- 1 leek, white and light green parts, finely diced
- 1 cup peas, fresh or frozen (not defrosted if
- frozen)
- 3 cups riced cauliflower*
- 2-3 tbsp. oil packed sun dried tomatoes (see
- note above), drained and patted dry with
- paper towel, chopped if large
- Kosher salt and pepper
Instructions

Heat oil over medium heat in a large sauté pan. Add onion, leeks, and a pinch of salt and sauté for 5 minutes or until soft and translucent. Add a tbsp. or so of water if the pan starts to look dry.

Add peas, cook tossing for 4 minutes or so.

Add riced cauliflower and a big pinch of salt and cook for 5 minutes.

Add the tomatoes, toss for 1 more minute.

Taste for salt, add if necessary and add pepper to taste. Serves 3-4 *Rice the cauliflower: Using about half of a cauliflower, cut into florets and place in a food processor, pulse until a rice-like texture appears. Measure 3 cups, set aside.

- Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
