This salad is amazing for your immune health. It is really satisfying when you want to EAT and CHEW—and, of course, when you are HUNGRY. I love it!

Ingredients

  • 8 kale leaves, ribs removed (I like lacinato
  • kale)
  • 1 tbsp olive oil for the kale
  • 1 large stalk broccoli, (usually a bunch has 2
  • large or 3 small stalks; use 1 large or 1½ small),
  • 2 cups chopped
  • ½ head cauliflower (no stems), 2 cups finely
  • chopped
  • 2-3 carrots, about 1 cup finely chopped
  • ½ cup dried unsweetened cranberries or ½
  • cup currants
  • ¼ cup raisins
  • ¼ cup sunflower seeds
  • 3-4 tbsp lemon juice
  • 1 tsp maple syrup

Instructions

    Finely chop the kale by hand or the processor. Place it in a large mixing bowl and massage it with the oil.

    Remove the head of the broccoli from the stem. Cut the florets into a few pieces. Trim the end of the broccoli stem, peel the stem using a vegetable peeler and cut the stem into 3-4 pieces. Place all the prepared broccoli into a food processor and pulse 6-7 times; you will have very small pieces (as if you chopped it by hand). Empty into a large mixing bowl.

    Cut the cauliflower florets into several smaller pieces but DO NOT use the stems and pulse 6 times in the processor. Add to the bowl with the broccoli.

    Cut the carrots into several pieces and pulse in the processor 10 times, add to the bowl.

    Add the cranberries or currants, raisins and sunflower seeds to the bowl, toss.

    Drizzle the tossed salad with lemon juice and maple syrup, toss. Serves 6-

    Lasts for a few days in the fridge, dressed.

Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
