Game Changing Chicken Fingers Recipe

These chicken fingers taste exactly like the “unhealthy” kind, but you will feel great about their nutrient profile. If you want to bake them instead of frying, generously oil a tinfoil lined cookie sheet, place the coated fingers on the sheet, and generously spray them with grapeseed or avocado oil and broil for 5 minutes per side.
Ingredients
- For the Chicken
- 1½ lb. chicken scaloppini, cut into 1-2 inch
- fingers
- 1 tbsp. grapeseed or avocado oil
- A few shakes of paprika
- A few shakes of granulated garlic
- A few pinches of salt
- ½ cup brown rice flour or regular flour
- 2 eggs, beaten
- Grape-seed oil for frying
- Quinoa Coating
- 1½ cup quinoa flakes
- 1½ tsp. granulated garlic
- ½ tsp. sea salt
- ¼- ½ tsp. pepper
- 1 tsp. paprika
Instructions

In a medium size bowl, mix all the ingredients For the Chicken (chicken, 1 tbsp. oil, paprika, granulated garlic and salt) together.

Mix together in a medium size bowl mix together Quinoa Coating ingredients, place in shallow dish.

Place eggs in another shallow dish, place flour in a third shallow dish. Arrange dishes so that flour is first, then the eggs, then the Quinoa Coating.

Dip each piece of chicken in flour, shake off excess. Dip in egg, then coat in Quinoa Coating mixture. Lay coated chicken piece on a prep sheet. Repeat with all the chicken.

Heat a large fry pan over med heat. Add oil to the hot pan, add 4-6 fingers in the pan at a time, fry for about 4 minutes on each side, repeat with all the fingers. Serves 6 Make Ahead Tip: The chicken can be floured, egged and coated, placed on a sheet of wax/parchment paper and either stored for the day in the refrigerator or frozen uncovered as is. Once frozen, the chicken pieces can be stored in a zip-lock bag. Allow the chicken to defrost uncovered in the refrigerator for a few hours or overnight before frying.
