This salad is great on its own but even better with the Marinated Greek Spicy Feta, DeliciousDish added to it.

Ingredients

  • 2 14-oz cans of butter beans, drained and
  • rinsed
  • 1 small red onion, finely sliced
  • 2 red peppers, sliced
  • 1 English cucumber, halved, quartered and
  • cut into chunks
  • 4 big tomatoes, chunked
  • 1 bunch parsley, leaves only, chopped
  • ½ bunch mint, leaves only, chopped
  • 1 cup pitted olives of your choice (I like
  • kalamata)
  • For the Dressing
  • ½ cup extra virgin olive oil
  • ¼ cup lemon juice
  • 2 cloves garlic, minced
  • 1 tsp. Dijon mustard
  • Salt and pepper

Instructions

    Mix the dressing ingredients together in a container, mix well.

    Place the butter beans in a bowl and toss with a few spoons of the dressing, set aside. This can be done hours in advance.

    Mix all the salad ingredients in a large bowl, this can be done in advance, do not dress until ready to serve.

    When ready to serve, add the dressed butter beans to the salad and toss with all of the dressing.

    Top with Marinated Greek Spicy Feta if you like. Serves 8
