Greek Salad with Creamy Feta Vinaigrette Recipe

This vinaigrette, is fabulous on a cold pasta salad, grilled veggies or seafood. You can leave the feta out, process the dressing ingredients without it and serve a large hunk of feta over the composed salad.
Ingredients
- For the Feta Vinaigrette
- About ⅓ cup high quality Greek feta
- cheese
- 1 large clove of garlic, minced
- 3 tbsp. lemon juice of about 1 lemon
- 3 tbsp. red wine vinegar
- ⅓ cup of olive oil
- 1½ tsp dried oregano
- Salt and pepper to taste
- For the Salad
- 2 large ripe beefsteak tomatoes, cut in
- large wedges
- 4 baby cucumbers, sliced in large rounds
- ½ red onion, sliced in ½ inch wedges
- ¼ cup kalamata olives
- 1 red pepper, sliced in ¼ inch slices
- 1 bag romaine hearts or 1 box or pre-
- washed romaine leaves, you will need
- about 4-6 cups shredded
Instructions

For the Feta Vinaigrette: Place all the ingredients in a food processor or blender. Process for a few minutes until a smooth consistency is formed. Scrape down the sides as necessary. Set aside.

For the Salad: Lightly toss or assemble the salad ingredients on a medium size platter.

Drizzle about ½ cup of the dressing over the salad, toss. Serve with addition dressing in a bowl on the side. Serves 4
