Kickin’ Strawberry Margarita - sides & salads recipe by Carolyn Cohen

I love this margarita because you can make the mix a day or two in advance and shake it or blend it with ice once you’re ready to serve.  And the unique salt on the rim of the glass is epic!  The sweet salty heat is perfect for this tangy, fruity (and sexy I may add) strawberry margarita mixture.  The added bit of Jalapeño is totally optional, but trust me, your guests will be remembering this cocktail for a long time!

Servings

4 people

Ingredients

  • 1 lime wedge
  • Zest of 1 lime
  • 1 tbsp Kosher salt
  • 1 tbsp sugar on the raw (coarse sugar)
  • A few shakes of chipotle chili powder
  • 2 cups strawberries, hulled, plus a few
  • extra to rim the glasses
  • 1 inch piece of jalapeno pepper, seeded and ribs removed
  • 120/4 mL/ounces lime juice
  • 2-3 tbsps honey or agave syrup
  • 175/6 mL/ounces silver tequila
  • About 4 cups crushed ice

Instructions

  1. 1

Rimmed glasses:Place some salt and the lime zest in a small plate that is slightly bigger than the diameter of the glass rim. Cut a little notch in the lime wedge and run that notch all around the rim of the glasses. Dip the edge of each glass in the glass in the zest, salt, sugar and chipotle mixture.

  2. 2

For the Strawberry Mix: In a blender, puree together the strawberries, jalapeño, lime juice, honey and tequila.

  3. 3

Blended:Add the ice and blend well

  4. 4

On the rocks:Pour into individual glasses over ice.

  5. 5

    Serve immediately.
