Passover Granola Recipe

This granola is so yummy you may want to use it all year! You can also replace the farfel for oats for all year ‘round.

Ingredients

  • 4 cups raw nuts*
  • 1 cup raw seeds**
  • 2-3 cups matzo farfel
  • 1 cup unsweetened shredded coconut
  • 1 cup dried cranberries
  • 1 egg white
  • 2 Tbs. water
  • 4 Tbs. coconut oil, melted
  • ⅓ cup honey
  • 1 tsp. vanilla extract or ½ tsp. vanilla seed
  • powder
  • 1 tsp. cinnamon
  • ½ tsp. kosher salt
  • *Raw Nuts: I use 2 cups walnuts, 1 cups
  • almonds, 1 cup cashews.
  • **Raw Seeds: I use ½ cup pumpkin seeds
  • & ½ cup sunflower seeds
  • NOTE: if you like to weigh things, the
  • combination of nuts and seeds should
  • weigh about 700g.

Instructions

    Preheat oven to 300˚F. Line a large cookie sheet with parchment paper.

    Put the nuts and seeds in the food processor and pulse a few times until a pea size crumb appears. Remove to a large bowl.

    To the bowl with the nuts add the farfel, coconut and cranberries, using your hands or a spatula mix together. Add the vanilla, cinnamon, and salt, mix again.

    Whisk together the egg white and water, whisk until frothy, about 1 minute. Add the oil, honey, vanilla, cinnamon, and salt. Whisk to combine.

    Mix the egg white mixture to the dry ingredients in the bowl, mix everything together well.

    Place the Granola mixture on the prepared cookie sheet and place in the oven for 40 minutes. After 20 minutes, stir, put back in the oven and after another 10 minutes, stir again, put back in the oven for the last 10 minutes or until it is golden brown.

    Allow the mixture to cool completely before breaking it apart. You will have some larger clusters (I love those) and some bits. Makes about 10 cups
