Prepared Sushi Rice Recipe

It is best to make sushi rice in a rice cooker. Most rice cookers come with a small rice measuring cup. This rice measuring cup correlates with the water lines on the rice cooker. One full rice measuring cup will correspond to the “1” line on the rice cooker. It is a Japanese measuring cup. The full rice cup is equivalent to 180 millilitres, while a standard U.S. cup measure is 240 millilitres. If you lost the rice measuring cup, use .75 of a regular measuring cup to match the lines on the rice cooker.
Ingredients
- 2 cups uncooked white sushi rice or 3 rice
- cooker cups*
- ½ cup rice vinegar
- 1 tsp sugar

In a Rice Cooker: Rinse the rice in a strainer or colander with cold water until the water runs clear, then place it in the rice cooker. Fill the rice cooker until the marking reaches the “3” line. Set the rice cooker to cook and wait for it to be done.

In a Pot: Rinse the rice in a strainer or colander with cold water until the water runs clear, then place it in the pot. Then add 3 cups water. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. The rice should be tender and water should be absorbed. Let it cool until it’s cool enough to handle. Best used warm.

Heat together the rice vinegar and sugar (I do this in the microwave). Add half of the mixture to the cooked hot or warm rice, stir gently to combine. Let it absorb for a few minutes. Add the remaining half, mix. Place a damp towel on top of the rice and let it cool completely (at room temperature if you have time or in the fridge if you don’t). Makes about 5-6 cups cooked rice.

- Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
