Quinoa Temaki Recipe

I love making and eating sushi, and these hand rolls are so easy and fun to prepare. They are filled with quinoa, are vegetarian, are super healthy, and even kids love em!
Ingredients
- 6 Nori sheets, cut in 4 squares
- 1 cup quinoa, cooked*
- 1½ Tbs. seasoned rice vinegar
- 2 tsp. sugar
- Temaki stuffings (use as many as you like,
- you need a handful for each hand roll)
- 1 ripe avocado, julienned into 4 inch strips
- ¼ english cucumber, seeds removed,
- julienned into 4 inch strips
- ½ -1 red pepper, julienned into 4 inch strips
- ½ block of med-firm tofu, julienned into 4 inch
- strips
- 1 semi ripe mango or papaya, julienned into 4
- inch strips
- 3 green onions, julienned into 4 inch strips
- Handful of pea sprouts or sun sprouts
- 10 asparagus, blanched, use the top 4 inches,
- cut in half lengthwise
- ¼ cup vegan or regular mayonnaise, I like
- “Veganaise” brand or kewpie Japanese mayo
- 2 Tbs. (or less) sambal oelek, or other hot chili
- sauce
- Soy sauce for dipping
Instructions

To Cook Quinoa: Put quinoa into a small sauce pan with 1½ c water and ½ tsp. salt, and bring to a boil. Reduce the heat and simmer covered for 15 minutes, fluff with a fork and let cool with lid off.

Heat sugar and rice vinegar together in a bowl in the microwave for about 30 seconds, stir to dissolve sugar.

Pour over quinoa, stir into quinoa (quinoa will stick together a little) set side.

In a small bowl, stir together vegan mayo and sambal oelek, set aside.

On a large plater, make individual piles of the optional Temaki stuffings.

Place the quinoa in a bowl (with a spoon in it) beside the platter of stuffings.

Place the nori squares on a small plate beside the platter of stuffings.

Allow everybody to make individual hand rolls, by scooping a small amount of quinoa on a nori square and then adding any/all/some of the Temaki stuffing on it. Add a dollop of spicy mayo, roll it up and dip in soy sauce. Serves 6-10

- Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.

- Many sides can be prepped in advance. Chop vegetables and make dressings ahead of time, then assemble just before serving.
