Smokey Lentil | Jicama | Hearts of Palm | Peanut Salad Recipe

This dish is similar to a ceviche but made vegan by replacing the fish with hearts of palm and lentils. I am serving this on a tostada but it can be served as a salad or in individual martini glasses with chips on the side as you would a ceviche. Pasilla chilis can be found at specialty stores and are stored at room temp in your pantry. They have an incredible earthy taste and are not spicy.
Ingredients
- For the Peanut Pasilla
- 2 tsp. ancho chili powder
- ¼ tsp. chipotle chili powder
- 3-4 tbsp. lime juice (more to taste at the
- end)
- ½ cup extra virgin olive oil
- ½ cup salted roasted peanuts
- For the Lentil Salad Mixture
- ¾ cup canned lentils, drained and rinsed
- 2 tomatillos, diced or about 10 cherry
- tomatoes, quartered
- ¼ of a red onion
- ½ cup small diced jicama
- ½ cup diced or sliced hearts of palm
- ½ of a firm but ripe avocado, diced
- 2 tbsp. chopped cilantro
- 2 tbsp. roughly chopped salted roasted
- peanuts
- For Serving
- 8 tostadas, optional
- Cilantro leaves
- Flaked sea salt (Maldon)

For the Peanut Pasilla: In a blender, blend together the ancho chili powder, chipotle chili powder, lime juice and olive oil. Add the peanuts and oil to the blender and blend until you have a roughly textured salsa.

For the Lentil Salad: Mix all the salad ingredients in a large bowl

Add the Peanut Pasilla to the lentil salad, toss gently. Add more lime juice to taste/

Arrange 8 tostadas on a platter or individual plates, top with the dressed lentil mixture, sprinkle with additional cilantro leaves and flaked sea salt. Serves 8 as a appetizer or salad.

- Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
