Smokey Lentil | Jicama | Hearts of Palm | Peanut Salad - sides & salads recipe by Carolyn Cohen

This dish is similar to a ceviche but made vegan by replacing the fish with hearts of palm and lentils. I am serving this on a tostada but it can be served as a salad or in individual martini glasses with chips on the side as you would a ceviche. Pasilla chilis can be found at specialty stores and are stored at room temp in your pantry. They have an incredible earthy taste and are not spicy.

Ingredients

  • For the Peanut Pasilla
  • 2 tsp. ancho chili powder
  • ¼ tsp. chipotle chili powder
  • 3-4 tbsp. lime juice (more to taste at the
  • end)
  • ½ cup extra virgin olive oil
  • ½ cup salted roasted peanuts
  • For the Lentil Salad Mixture
  • ¾ cup canned lentils, drained and rinsed
  • 2 tomatillos, diced or about 10 cherry
  • tomatoes, quartered
  • ¼ of a red onion
  • ½ cup small diced jicama
