Southern Italian Kale Salad Recipe

This salad is so delicious and sophisticated; add it to any dinner, casual or elegant. Just make sure your shred the kale and massage it before you dress it, it makes it much more palatable and easier to digest.
Ingredients
- 6 oz kale, chiffonade*, about 10 stalks
- 4 Tbs. best quality extra virgin olive oil
- ⅓ cup currants or yellow raisins
- ⅓ cup toasted pine nuts
- 4-6 Tbs. lemon juice
- Coarse sea salt
- Freshly ground pepper
- 3 oz (1 cup) lightly packed shaved
- parmigiano cheese (I do this with a
- vegetable peeler)
Instructions

In a large bowl, drizzle the kale with the olive oil and using your hands, massage the kale until it softens a little.

Mix in the raisins and pine nuts.

Drizzle with lemon juice and salt and pepper, toss. Taste and add more olive oil if it is too lemony.

Using a vegetable peeler, shave stripes of parmigiano cheese.

Add parmigiano, toss again.

Serve immediately or let sit for 10-30 minutes or so. Serves 6 Note: This salad tastes great even the next day! * the term chiffonade means ribbons. To make the chiffonade, stack the kale leaves about 10 leaves on top of one another, roll them up (in the length) and VERY thinly slice the roll (widthwise). Sprinkle them into the bowl, separating all the ribbons.
