When I first tasted this delicious combination of ingredients, it brought on a taste memory of a time I spent in a fabulous restaurant in Jerusalem where meats were cooked over an open fire and served family style.

Ingredients

  • 1 large onion, roughly chopped
  • 1 cup (packed) parsley leaves
  • Juice of 2 lemons
  • ¼ cup vegetable oil (canola, sunflower,
  • grapeseed)
  • 1 clove garlic
  • 1 Tbs. kosher salt
  • 2 lbs of boneless skinless chicken thighs*,
  • cut into 1-inch pieces
  • 4-8 metal skewers

Instructions

    Using a blender, blend together the onion, parsley, lemon juice, oil, garlic and salt. It should look like a smoothie!

    Place in a zip top bag, add the chicken, mix together and marinate for the day or up to 2 days.

    When ready to cook, take the chicken out of the fridge for 1 hour before cooking. Heat the grill to med high for at least 20 minutes. Thread the chicken pieces on the metal skewers.

    Cook the chicken over direct heat for about 10-12 minutes total, turning several times during the cooking. Serves 6 You can use chicken breast, but they are not as forgiving on the BBQ, they tend to dry out. Also, unlike thighs, you should only marinate the breasts for no more than 12 hours. Cut each breast into 5-6 pieces I like to use long metal skewers because I use them just for the cooking and not for serving and you will have less skewers to attend to, it makes it easier to handle. If you can find flat ones, they are better because the meat does not spin around when you turn them over.
