Making the perfect smash burger is all about technique. Make sure you start with really good beef, I like medium fat (not lean). I suggest making these on the grill either on a grill mat (see photo) or on a cast iron pan. I will give directions for the grill mat but if you use a cast iron pan, the instructions are the same except you need to preheat the pan for at least 10 minutes over medium heat..

Ingredients

  • 680 grams or about 1½ pounds ground
  • beef
  • Kosher salt, to taste (about ½-¾ tsp.)
  • Freshly ground pepper to taste (about ¼
  • tsp.)
  • 4 potato buns
  • 2 tomatoes, sliced
  • 1 onion, sliced
  • 4 large lettuce leaves, I like Boston
  • 4 slices of cheese, optional (I like Swiss
  • but American cheese is more traditional)
  • DD Special Sauce
  • 3 tbsp. Hellmann’s mayo
  • 2 tbsp. bbq sauce
  • 1 tbsp. yellow mustard or dijon
  • 1 heaping tsp. finely minced pickles (I like
  • cornichons)
  • 1 tsp. Worcestershire sauce

Instructions

    Break up the ground beef with your fingers and add the salt and pepper. Mix the salt through the beef using your fingers. Do this gently and lightly, there should be lots of air in the beef.

    Separate the beef into 4 and lightly roll the beef into a large ball, it will look like a baseball. Refrigerate.

    Make the sauce. Mix together the mayo, BBQ sauce, mustard minced pickled or cornichons and Worcestershire sauce.

    Heat the grill to medium heat and lay the grill mat on the grill. Or heat a large cast-iron skillet over medium heat. Meanwhile, open the hamburger buns and place the buns onto the heated skillet or grill, and cook until golden brown, 2 to 3 minutes. Transfer to a plate and spoon 1 tbsp. of sauce on each top bun, along with a piece of lettuce and 2 slices of tomato.

    Place the balls of meat on the heat source (grill covered with mat or cast iron pan), leaving plenty of room between them. Using a large, sturdy metal spatula, firmly smash each meat portion into a ⅓-inch-thick round patty. Cook the burgers without touching them until the edges are brown and crisp, 2½ minutes, then flip them.

    If using, place a slice of cheese on each burger and continue to cook until medium, 1 minute more.

    Transfer the burger to each bottom bun, then sandwich with the top bun and lettuce and tomato, and serve. Serves 4 (4 burgers)

Yes! This freezes well for up to 3 months. Let it cool completely before transferring to a freezer-safe container. Thaw overnight in the refrigerator before reheating.
Cooking Tip
For the best results, let your beef come to room temperature for about 20 minutes before cooking. This ensures even cooking throughout.
