Wildberry Pie Oat Bars Recipe

I really do love anything berry but especially when they come guilt free. These decadent bars are refined sugar-free, gluten-free, vegan and incredibly delicious. They are not too sweet, just the way I like them and a great power snack. Feel free to make just blueberry or raspberry bars by subbing frozen or fresh raspberries or blueberries.
Ingredients
- For the Oat Bar Mixture
- 1½ cup oats
- 1½ cups oat flour
- 1½ tbsp. ground flax seed
- 6 tbsp. maple syrup
- 9 tbsp. melted coconut oil
- ¼ cup shredded unsweetened coconut
- For the Wildberry Filling
- 3 cups frozen berries (any)
- 3 tbs maple syrup
- 1 tbsp arrowroot powder or cornstarch
- 1/4 tsp almond extract, optional
- Pinch of salt
- For the Topping
- ¾ cup Oat Bar Mixture
- ½ cup oats
- ¼ cup shredded unsweetened coconut

Make the Wildberry Filling: In a medium pot bring the frozen berries, arrowroot powder or cornstarch, maple syrup and salt to a boil. Let simmer for 3-4 minutes, stirring and mashing the berries with the back of the spoon or fork. Place in the fridge to cool.

Make the Oat Bar Mixture: In a mixing bowl, mix together all the ingredients for the Oat Bar Mixture, mix well. Reserve ¾ cup for the Topping and set aside, don’t forget to do this!

Spray and then line a square brownie pan (8-by-8 or 9-by-9) with parchment paper.

Press the Oat Bar Mixture (leaving the ¾ cup reserved for the Topping aside) into the bottom of the pan. Place in the fridge to harden while the Widlberry filling is cooling.

Preheat the oven to 350˚F.

Make the Topping: Mix together the reserved 3/4 cup Oat Bar Mixture with the remaining ingredients in the Topping list.

Remove the Widlberry Filling and the Oat Bar Mixture in the pan from the fridge and spread the Widlberry Filling on top of the Oat Bar Mixture in the brownie pan.

Sprinkle The Topping on top of the Widlberry Filling. Bake for 30 minutes. Cool and store in the fridge.
