Apple Sunshine Cake Recipe

This cake is perfect for the weekday. It has loads of healthy ingredients and goes great with a cup if coffee or tea. It will last for days and keeps getting moister.
Ingredients
- ¾ cup grated apple (not peeled),
- 1-2 med size apple (I like honey
- crisp)
- ⅓ cup prunes, slivered
- ⅓ cup raw sunflower seeds
- ¾ cup plus 1 Tbs. all purpose flour
- (3¾ oz., 106g)
- ¾ cup plus 1 Tbs. whole wheat
- flour (3¾ oz.106g)
- 2 tsp. cinnamon
- ½ tsp. salt
- 1 tsp. baking soda
- 6 Tbs. room temp butter or
- coconut oil
- 1 cup sugar
- ⅓ cup sunflower, grapeseed or
- extra light olive oil
- 2 eggs
- 1 tsp. pure vanilla extract
Instructions

Brush an 8-inch springform pan or large loaf pan with melted butter, coconut oil or spray it, cover the bottom with parchment paper. Preheat the oven to 325ºF.

Combine grated apple, prune slivers and sunflower seeds in a bowl.

In a large bowl, combine the flours, cinnamon, salt, baking soda.

In food processor or mixer, cream together the butter or coconut oil and sugar, add oil slowly, scrape bowl down and mix once more.

In a small bowl, beat eggs together with the vanilla, add to the food processor.

Add the dry ingredients, process only until combined, scrape the bowl down and give one more quick mix.

Fold in the apple mixture.

Scrape the batter into the pan, bake for 50 minutes or until a tester comes out clean and dry. Let the cake cool in the pan for 15 minutes before removing it. Serves 8-10
