Banana Chocolate Chunk Tahini Ice Cream Recipe

If you are craving something sweet but want to stay off the rich stuff, this is your recipe. It is simple, delicious and it will definitely hit the spot! It is also rich in omega-3 fatty acids and calcium. The cinnamon will help keep your blood sugar stable.
Ingredients
- 2 frozen bananas*
- ¼-½ cup unsweetened non-dairy milk
- (almond, coconut, oat, soy, etc.)
- 4 Medjool dates, pitted
- 2 tbsp tahini
- 1 tsp cinnamon
- Pinch of kosher salt
- ¼ cup pecans
- 50 g dark chocolate, chopped up
Instructions

Place the liquid in the blender first, then add everything else to the blender except the chocolate and blend until smooth. (I use my tamper to make sure everything gets pushed down.) Remember, there is not a lot of liquid in this, so you will need to give the blender a little assistance.

Scoop mixture out of the blender and into a parchment lined container. Stir in the chocolate and freeze for 20-30 minutes before serving.

*When my bananas are on their last legs (lots of spots but not black), I cut them into pieces (about 6 pieces per banana), place them on a parchment lined tray and throw them in the freezer. When the pieces are frozen, I place them in bags, 3 pieces per bag, totalling a half- banana serving per bag. Then I can use them in smoothies or for this treat. Freezing them in half-banana servings makes it very usable!
