Bird Seed Crackers Recipe

The crackers are super easy to make and freeze well. They are made entirely of seeds. They are flour-less, sugarless, gluten-free, vegan & perfect when you need something crunchy to use as a base for a spread like humous, tahini or any healthy spread or dip.
Ingredients
- 2 cups mixed seeds, chia,
- sesame, pumpkin, whole flax
- seed, poppy, sunflower, hemp*
- 2 Tbs. extra virgin olive oil
- 1 large shallot, grated finely
- 1 large clove garlic, minced
- ¾ cup water, plus 2 Tbs.
- ⅛ tsp. salt
Instructions
- 1
Preheat oven to 325˚F
- 2
Measure the water in a large liquid measuring cup.
- 3
Add grated shallot, garlic, oil and salt to the water, mix well, set aside.
- 4
Mix seeds together in medium size bowl.
- 5
Stir water mixture into seed mixture, stir until a thick paste is achieved.
- 6
Line a cookie sheet with parchment and spread mixture on sheet, make it thin enough so that most of the sheet is covered. I use my clean hands for this. Make them as thin as you can.
- 7
Place in the oven for 30 minutes. Remove from oven, place a second sheet of parchment over cracker mixture on sheet, using a second sheet (flip the sheet up side down so that it nest into the first sheet), flip the 2 sheets over together so that the dough is now on the second sheet, and peel off the bottom parchment which is now at the top. Using the now bottom parchment sheet, slide the dough back onto the warm cookie sheet (right side up). Using a knife, or pizza cutter, cut into 25 squares and put back in the oven for another 20-30 minutes. Or until crackers are browned and crisp. Turn oven off and leave the crackers in the oven to cool and firm up.
