Cold Soba Salad with Crispy Broccoli and Soy Vinaigrette Recipe

This delicious noodle salad comes together really fast and lasts for a few days in the fridge.

Ingredients

  • For the Salad
  • 1 head broccoli, cut into medium-size
  • florets
  • Salt for the water
  • ½ of a 250g bag of soba noodles (I like
  • King Soba brand or one paper tied
  • bundle)
  • For the Dressing
  • ¼ cup rice vinegar
  • 3 tbsp sunflower, canola, grapeseed or
  • avocado oil
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1-2 tsp freshly grated ginger
  • ¼ tsp crushed red pepper flakes
  • 2 tbsp toasted sesame seeds, black and
  • white mix if possible
  • 3 green onions, sliced in thin rounds

Instructions

    Boil the broccoli: Bring a large pot of water to boil. Add about 1 tbsp salt. Add the broccoli and boil for 90 seconds, then immediately scoop broccoli out of the water and place in an ice bath for 15 seconds, remove and place on a towel.

    Boil the soba noodles: Remove paper ties. Bring water to a rolling boil and slowly submerge noodles then reduce to medium heat. Gently separate with a fork. Cook for 5-6 minutes. Do not overcook! Drain and rinse well with cold water.

    For the Dressing: In the meantime, make the dressing by mixing all ingredients together, set aside.

    Toss the soba noodles with the broccoli and the dressing, taste. Serves 4 as a side dish.

Store in an airtight container at room temperature for 2-3 days, or in the refrigerator for up to a week depending on the ingredients.
