Healthy Chocolate Straws - dessert recipe by Carolyn Cohen

Adding dates to the chocolate filling gives these straws that gooey chocolate filling without the chocolate overload.

Ingredients

  • 2- 100 gram bars of chocolate, I prefer
  • 70% but it is totally up to you, DIVIDED
  • 5 Medjool dates, pitted
  • Big pinch of kosher salt or a small pinch of
  • sea salt
  • 24 square wonton wrappers, defrosted if
  • frozen
  • Cooking spray

Instructions

  1. 1

In a small bowl, cover dates with boiling water and let soak while you prepare the remaining ingredients.

  2. 2

    Preheat oven to 400˚F.

  3. 3

Line a large baking sheet with parchment paper.

  4. 4

Break up 1½ bars (150 grams) of the chocolate and place in the bowl of a food processor. Reserve the last ½ bar or 50 grams for melting and drizzling in Step

  5. 5

When the dates are soft, lift them out of the water and blot them dry with paper towel. Place in the processor with the chopped chocolate. Add the salt. Pulse to combine until finely minced.

  6. 6

Place about 2 tsp. filling diagonally across the wonton wrapper, roll the two opposite corners in towards one another to cover most of the filling. Place seam side down on the sheet and spray with oil.

  7. 7

Bake for 10 minutes. Let cool.

  8. 8

In the meantime, melt the last ½ bar of chocolate. I use the microwave in 10-second increments, stirring between each increment. When the straws are cooled, using a spoon, drizzle them with chocolate in a zigzag fashion. Let the chocolate drizzle harden before serving. Makes 24 straws
