Jo’s Chocolate Wafer Sandwich Cookies - Joreos Recipe

Ingredients
- For the Cookies
- 2 sticks of butter, 227 grams
- ¾ cup sugar
- 1 ¾ cups plus 1 ½ tbsp
- Unbleached flour, plus
- more for dusting
- 1 cup plus 1 tbsp cocoa
- powder
- 1/4 tsp baking soda
- 1.5 tsp salt (2 tsp kosher
- salt)

- For the Filling
- 4 tbsp unsalted butter,
- softened (60 grams)
- 1 ¼ powdered sugar (aprox
- 150 grams)

For the Cookies : Preheat oven to 325˚F.

In a medium bowl combine the flour, cocoa powder, salt and baking soda. Set aside. Beat butter and sugar until light- About 1 minute, scraping the bowl as you go. Add in the dry ingredients a few scoops at a time with the machine running on low until everything is moistened. Then beat to combine on medium but DO NOT OVERBEAT.

Scrape the dough from the bowl and onto a piece of plastic wrap. Press the dough tightly together into a ball. Refrigerate for 30 minutes to rest and chill.

Roll the chilled dough onto a cutting board sprinkled with icing sugar mixed with cocoa powder and flour. Roll out the dough as EVENLY as possible to about ⅛ inch thick or a tiny bit thicker.

Using a round cutter or cutter of your choice, cut cookies close together and then transfer to a tray that will fit in the fridge. You can reuse the scraps and re-roll and cut. Chill for 10 minutes. Cover a baking sheet in parchment that fits perfectly in the pan with no edges going up the sides- This will help cookies bake flat and stay round. Set cookies on the tray about 1 inch apart. Bake for 15-17 minutes, rotating the tray as needed and to prevent burning.

Allow cookies to cool completely before filling.

For the Filling and Assembly: Mix together and add a drop of vanilla if desired. Roll into a disc and chill for 15 mins. Roll flat to ¼ inch and cut rounds the same size as your cookies.

Using a mini spatula transfer onto well cooled cookies and sandwich together.
