One Pot Chocolate Chip Cookies - dessert recipe by Carolyn Cohen

I love baking with kids and teaching my own children how to bake. This is the perfect starter chocolate chip cookie recipe. It is very fast, no machines required and made in one pot! Get the kids in the kitchen, it will be w winning experience!

Ingredients

  • 1 stick unsalted butter (8 Tbs., 4oz.)
  • ½ cup light brown sugar (4oz.)
  • ⅓ cup granulated sugar (2½ oz)
  • 1½ cup all purpose flour (6¾ oz)
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 large egg
  • 1 tsp. vanilla
  • ¾-1 cup chocolate chips (4-6 oz)
  • ½ cup chopped nuts, optional

Instructions

  1. 1

Preheat oven to 350º, adjust oven rack to the middle of the oven (alternatively - 325º convection, racks are at the upper ⅓ and lower ⅔ of the oven). Line 2 baking sheets with parchment.

  2. 2

Melt butter in a saucepan, take off heat, add sugars, whisk to combine well. Set aside to cool.

  3. 3

In a medium size bowl, combine flour, baking powder and salt.

  4. 4

Add egg to cooled butter/sugar mixture. Whisk a lot until the color lightens a little. Add vanilla.

  5. 5

Add flour mixture to butter mixture in the pot. Stir with rubber spatula until just combined.

  6. 6

Add chocolate and nuts if desired.

  7. 7

Using a spoon, form small balls of dough on the cookie sheets about 1½ inches apart; you should have about 12-14 balls on a cookie sheet.

  8. 8

Bake for 12 minutes or until lightly golden Makes 24 cookies Variation: If you do not let the butter sugar/mixture cool completely, the chocolate chips will melt a little while stirring them into the batter, producing a “marbled” look. You can remove 1½ oz flour and replace it with 1½ oz of oatmeal for a delicious variation. You can freeze the dough by forming your balls on a parchment lined cookie sheet (no need to space them out) and placing sheet in freezer. Once the balls are frozen, toss them in a ziplock bag. When you are ready to use them, simply preheat your oven and bake the cookie balls from frozen.
