This sauce is a must have addition to any Thai cooking. It is used as a dipping sauce as well as a seasoning sauce. You must make this before starting your Thai prep cooking, the store bought stuff does not taste the same and it is loaded with sugar.

Ingredients

  • ¾ cup water
  • 5 tbsp. maple syrup
  • 3½ tbsp. apple cider vinegar
  • 3 cloves garlic, chopped finely with a knife
  • 3 tbsp. fish sauce
  • 1 tbsp. chili flakes
  • 1 tsp. cornstarch
  • 2 tbsp. water for the cornstarch

Instructions

    In a small pot, heat the water, maple syrup, apple cider vinegar, garlic, fish sauce, and chili flakes. Bring to a simmer and cook for 5 minutes.

    In a small bowl, mix together the cornstarch and the 2 tbsp. water until the cornstarch has dissolved. Pour this into the hot chili garlic sauce, stir and let simmer for 5 additional minutes. Turn off the heat, it will thicken. Pour it into a jar and store in the fridge. It will keep for a week or two. Makes about 1¼ cups.
