Cucumber salad is the quickest easiest vegetable side dish around. It is healthy and goes with just about anything. I love this next to grilled chicken, fish or beef.
This cucumber salad gets better as it sits. Make this several hours ahead of time and leave it at room temperature. It will last several days in the fridge.
Simple Marinated Cucumber Salad
- 1 English cucumber
- 1/4 cup rice vinegar
- 1 tsp sesame oil
- 1 tsp honey or sugar
- 1/2 tsp kosher salt
- 1 tbsp toasted black and white sesame seeds
- Using a knife, slicer on a food processor or mandolin, slice the cucumber into 3mm slices. Place slices in a medium size mixing bowl.
- Drizzle the vinegar and oil over the cucumbers, sprinkle with the honey and salt, mix and toss together very well. Sprinkle with sesame seeds, toss. Let marinate at room temp for about 30 minutes or longer before serving. Toss again before serving.
